Duck Egg Quiche

A fluffy, moist, delicious quiche alternative (we do this as a crustless quiche, but you could also bake it in a pie crust or layered pastry)


1.5 cups full cream milk

6 duck eggs

2.5 tablespoons flour

2.5 teaspoons baking soda

Salt and pepper to taste

1.25 cups shredded cheese (whatever you like)

A cup or so of veggies – your choice – onion, kale, silverbeet, mushroom etc


Preheat oven to 180 degrees celcius.

Combine wet ingredients thoroughly, add dry ingredients and mix in. Mix in the veggies.

Pour contents into a baking tray and set it in the oven for 50 mins (test it, each oven is different, you just want it to set)

To serve

Slice the quiche and serve with rice or salad, or both. Tada!
