Delicious as a snack, part of a main meal or on a roll for lunch 😉
2 large onions, cut into quarters
1-2kg piece of roasting or shoulder pork
2 cloves of garlic (crushed)
1 tsp of oregano (better if fresh)
Salt and pepper to season
750ml chicken stock or broth
Place onions in slow cooker. Rub roast with garlic, oregano, salt and pepper.
Place roast on onions. Pour broth over roast. Cover and cook on LOW 8 to 10 hours or until meat shreds easily with a fork.
Transfer roast to a cutting board or serving platter; shred using forks, removing any large pieces of fat. Remove onions with a slotted spoon, and serve with pork.
Depending on the season serve with rice, roasted veggies, a coleslaw, green salad or on a bread roll or all of these if you like (you can always pop veggies into the slow cooker for a few hours along with the pork for a delicious one-pot meal).
