Spaghetti Bolognaise (with veggies)

One of our children’s favourites (and they know the veggies are in there too)


2 teaspoons olive oil

500g beef mince

1 large onion, chopped

2 garlic cloves, crushed

1 large zucchini, grated

200g mushrooms, sliced

750g tomatoes chopped or in passata

1 cup cheap red wine

200g tomato paste

400g soaked and cooked kidney beans

sprig of fresh oregano

sprig of fresh thyme


Heat oil in a saucepan on medium heat and add onion, garlic and beef mince, cook until browned.

Add remaining ingredients and simmer until sauce has thickened.

To serve

Serve with spaghetti or pasta spirals, dust with parmesan or grated cheese.
